Viticulture
The vineyards are planted on gentle slopes of the hills of the Coastal Range, less than a kilometer away from the Maule River. They receive minimum intervention and produce low yields.
85% País. Un-grafted, head pruned vineyards established before 1900 according to official records. 5% Cabernet Sauvignon. Un-grafted vineyards established before 1900 according to official records. 10% Syrah, un-grafted vineyards.
Vinification
The three grape varieties where co- fermented starting with whole berries (some carbonic maceration was generated), with selected Burgundian yeasts. The extraction of tannins was very careful; with gentle pump-overs and relatively low fermentation temperatures, (País grapes tend to have “rustic” tannins). Some of the wine was aged in old French oak barrels for six months before bottling.
