Vinification
Manual grape cluster selection prior to destemming. Cold maceration of grapes for 6 days at 6°C before alcoholic fermentation. Fermentation takes place in stainless steel tanks for 17 days at a temperature of 27 - 30°C. Maceration post ferment for 7 - 10 days. Tanks are drained and pressed, after which the wines undergo malolactic fermentation
