Vinification
Grape clusters are manually selected and whole berries are pressed. The juice is clarified by natural cold decantation for 24 hours and fermented in stainless steel tanks at 15 – 18 °C for 15 - 20 days. Fermentation lees are worked ("batonnage") twice a week up to the last week before bottling
