Vinification
Grape clusters and berries are selected prior to and post destemming. Pre-ferment cold maceration at 5 °C for 3 – 4 days. Alcoholic fermentations takes place in stainless steel tanks at 23 – 25 °C for 15 days. Post alcoholic fermentation the wine is macerated on the grape skins for 2 days, after which it is drained, grape skins are pressed and the wine completes malolactic fermentation in stainless steel tanks.
