Description

This blend opens with intense aromas of berries, fresh herbs and mint over a layer of fruit with added complexity of tobacco tones and smoke from barrel aging. Elegant on the palate with a pleasant persistence on the finish. Serve between 16°C - 18°C. This mix pairs well with grilled steaks and chops, Portobello mushrooms, green olives, pepper, rosemary, and mint.

Viticulture

The vineyards are located in the mountainous area of Valle Lontué, in the town of Sagrada Familia. Plants over 15 years old. Regarding the soils, they are mostly of alluvial origin, moderately deep, with good drainage and a moderate percentage of organic matter. Mostly silty clay loam.

Vinification

Cold maceration for 5 days at 10°C. Then alcoholic fermentation at temperatures between 25° and 29°C. We do not seek over-extraction, only pump-overs that improve color and help good fermentation kinetics. Short post-fermentative maceration. 12 months in first and second use French and American oak barrels (225L). Barrels with extra fine grain are privileged and the toasted ones are a mixture of MT and M+.
