Description

This is our first iconic blend with an exceptional base. To complete the circle of balance, this wine is aged for 18 months in French oak barrels. The wine opens with refined notes of ripe black fruit, cherries and plums. The aromas are layered with vanilla, cinnamon, chocolate and leather, the texture is angular and sophisticated with a long and elegant finish. Serve between 16°C - 18°C succulent preparations with meat, especially meals that include red meat and pork.

Viticulture

The vineyards are located in the mountainous area of Valle Lontué, in the town of Sagrada Familia. Plants over 15 years old. Regarding the soils, they are mostly of alluvial origin, moderately deep, with good drainage and a moderate percentage of organic matter. Mostly silty clay loam.

Vinification

The different varieties that make up this blend are vinified separately. The grapes are harvested between the end of April and the beginning of May manually, in 12 kg boxes, and once received at the winery, they go through a destemming process and a selection table before reaching the fermentation tank. Prior to alcoholic fermentation, a cold pre-fermentative maceration is carried out for 5 days. This has the objective of controlling the onset of AF, in addition to extracting anthocyanin compounds. Once this process is finished, the sowing of selected yeasts is carried out, which will start the alcoholic fermentation, a process that lasts approximately 15 days. Fermentation temperatures vary between 27°- 30° Celsius, and extractions by pumping over or stamping are carried out very delicately, taking care to extract phenolic compounds. Then the wines undergo a spontaneous MLF. 18 months in first-use French oak barrels (225L). Barrels with extra fine grain are privileged and the toasted ones are a mixture of MT and M+.
