WINEMAKING -- Tradicional Method The grapes were hand harvested early in the season to retain their fresh character. Secondary fermentation takes place in the bottle. Underground cellar provide stable temperature rooms, with 15ºC t 17ºC. The bottles were laid down for a minimum of 30 months on its lees, before dégorgement. This calm period provides elegance and greater complexity and structure. No sweetness correction was made.
